SIUS Allergen Awareness Training covers the Big 9 food allergens recognized under the FASTER Act of 2021 (milk, eggs, fish, shellfish, tree nuts, peanuts, wheat, soybeans, and sesame), cross-contact prevention protocols, front-of-house/back-of-house allergen communication, emergency response procedures, and guidance on building an allergen control plan for your establishment. The course also covers the difference between food allergies and food intolerances – and why the response protocols are different for each.

Allergen training requirements vary by state. Several states already mandate allergen awareness training for food service managers or staff. Even in states without a specific mandate, the FDA Food Code (a model code adopted in whole or in part by most jurisdictions) expects the person in charge to demonstrate knowledge of major food allergens and ensure staff are informed. No state requirement does not mean no risk – it means training is your decision, not the government’s.

The SIUS Allergen Awareness Training certificate is valid for 3 years from the date of completion. Some states with specific mandates may have different renewal cycles – Illinois, for example, requires renewal every 3 years, which aligns with the SIUS certificate validity.

Allergen awareness training is a specialized course focused on allergen identification, cross-contact prevention, communication protocols, and emergency response. In states with allergen training mandates, it must typically be completed as a separate program.
Call 911 immediately if the guest shows signs of anaphylaxis – difficulty breathing, swelling of the throat or tongue, rapid pulse, dizziness, or loss of consciousness. Keep the guest calm, seated, and monitored. Identify what they ate and preserve any remaining food for investigation. Document the incident thoroughly.
